Uncommonly Good Bread

What do you think of when you think of bread.  Where can you find real bread?  Where can you find bread without a vast list of improvers, and e numbers, and emulsifiers (Who wants to eat emulsifiers?)?

Bread has been a staple food in our diet for thousands of years, but why are there so many wheat allergies, and gluten allergies all of a sudden?  We can't answer all of these questions, but we do know that people want honest bread, with real wholesome ingredients.  But not ALL people can eat wheat... When we first started out eleven years ago, we made eight varieties of bread, one of which was made with spelt flour.  We soon discovered how many of our customers, enjoyed the spelt loaf, but wanted more variety. Eventually we adapted all our remaining recipes from conventional wheat to spelt.  Our customers were very happy.

So, what do you see, and what do you get?  Locally grown spelt flour from Sharpham Park in Somerset, and Shipton Mill in Gloucester, provide us with high quality Soil Association approved spelt and rye flours.  German Sourdoughs, full of long shelf life, are preserved with natural fermatation.  Italian focaccia, rich in olive oil, and lovely fillings; sweet doughs, enriched with eggs and honey, seeds, and fruit, as well as good old traditional wholemeal loaves are all available.  Recently we added a new all white spelt bloomer to our line that our customers rave about.  (But we have to be honest, the white loaf doesn't have as much nutrition!!!)
